Cheese Souffles

Been on a bit of a roll with the Twice Baked Cheese Souffles recently - had an order for 24 from my sister so thought I would share photos so that if you ever make the same recipe you will know what to expect!

Here they are just out of the oven all risen and puffy :-)

Here they are five minutes later :-(

Still the point of the recipe is that you prepare them to this stage. Cool them and turn them out. You can then freeze them if you wish to keep for future use, or the next stage (hence twice baked) is to pour over seasoned cream and sprinkle with cheese before putting back in the oven for 15-20 mins. Then they come out bubbling and cheesy and yummy. Should have taken a photo of that - but somehow they got eaten up!!

If freezing they must be defrosted before baking again.

My recipe comes from an old Good Housekeeping magazine.

Congratulations to your niece. I was in Canterbury outside the Cathedral gate just today. There is a lovely fabric shop just a few door down. Face the gate and then walk down to your left - it's on the right hand side - you can't miss it!
